Katsuo-no-tataki — lightly seared bonito served rare with ponzu, grated ginger and local citrus — is Nichinan's signature dish and one of the great flavours of southern Kyushu. The fish is caught daily by local boats and prepared with a quick flame sear that leaves the inside raw and silky. Several small restaurants near the Aburatsu fish market serve it alongside other local specialities: flying fish tempura, cold soba noodles with fresh wasabi, and seasonal sashimi platters. Lunch service (11:30–13:30) is the best window for the freshest catch. Most restaurants are casual, family-run places with counter seating and picture menus, so a language barrier is rarely a problem. Budget around ¥1000–2000 per person for a satisfying meal.
